What are sulphites and why do some people react to them?

Sulphites are naturally present in wine and are also used during winemaking to help preserve freshness, stability and flavour.

You’ll often see the words “contains sulphites” on wine labels. This is because sulphites are commonly used in wine and must be declared when they exceed certain labelling thresholds.

For most people, sulphites are not an issue at all. But some people are more sensitive than others, and their experience of wine can feel very different.

Research shows that sulphite sensitivity may be linked to a range of reactions in sensitive individuals, including flushing, respiratory symptoms, skin reactions and digestive discomfort. Some research has also explored the relationship between sulphite levels in wine and headaches in people who are already susceptible to wine-related headaches.

Why do wine bottles say “contains sulphites”?

Hangovers are primarily caused by alcohol and dehydration, not sulphites.
